No Bake Chocolate Cookies

As a child, I loved to make cookies and pie dough. My mother was a thoroughly “modern” woman during the ’60s, so TV dinners were our mainstay. But cookies were my domain, and I loved trying any cookie with chocolate. This recipe was one of my favorites, since the time between making the cookies and eating the cookies was very short!

When culling cookbooks recently, I discovered my 1982 Zale Day Care Center Cookbook and this old recipe. On the cover of the cookbook is our eldest daughter as a toddler, and she is now the mother of our grandchildren. Making the cookies brought back all sorts of memories, which is one of the joys of being in the kitchen.

Ingredients:

  • 2 cups sugar
  • ¼ cup cocoa
  • ½ cup milk
  • ½ cup butter
  • ½ cup chunky peanut butter
  • ½ teaspoon vanilla extract
  • 3 cups old-fashioned oats

Instructions:

  1. Prep the peanut butter and oats, making ready to add to the cocoa mixture by measuring and setting aside in appropriate measuring containers.

  2. Combine sugar, cocoa, milk and butter in saucepan. Bring to a full boil and then boil for one additional minute, stirring constantly. Do not over cook or else the cookies will be crumbly.

  3. Remove from heat and stir in remaining ingredients.

  4. Drop by spoonfuls onto waxed paper. Cool thoroughly before removing and placing on serving plate. Or eat directly from the waxed paper.
