Since corn and cilantro are on our minds, here is a great salsa with TONS of flavor.
INGREDIENTS
1 cup cooked corn kernels
1 tomato, chopped
1 jalapeno pepper, minced
1 tablespoon red onion, chopped
1 tablespoon cilantro, minced
1 tablespoon lime juice
1 tablespoon olive oil
1 clove of garlic, minced
DIRECTIONS
Combine all ingredients in a medium bowl and mix.
Cover and chill one to two hours.
Serve.
