Cranberry Walnut Cobbler

By Yvonne Martin of The White Oak Inn

You won’t believe how easy and tasty this recipe is. Buy cranberries now while they’re fresh in the stores and freeze some for later because your family is going to beg you to make this again. Best if served warm with ice cream!

Ingredients:

  • 1 cup flour
  • 1 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 cups whole fresh cranberries
  • 1/2 cup chopped walnuts
  • 2 eggs
  • 1 teaspoon almond extract
  • 1/2 cup melted butter (1 stick)

Instructions:

  1. Spray a 9 inch pie plate with cooking spray. Preheat oven to 350 degrees.

  2. Mix together flour, sugar, cinnamon and salt.

  3. Mix in cranberries.

  4. Pour walnuts on top, but don't mix in.

  5. Beat eggs with almond extract and butter and pour over dry ingredients. Mix well and spoon into prepared pie plate.

  6. Bake at 350 degrees for about 40 minutes or until a knife inserted in center comes out clean.
