Strawberry Orange Muffins

There are days we get “stuck in a muffin rut” and this sounded like just the ticket to raise us out of our rut!

Ingredients:

  • 1 1/2 cup chopped strawberries
  • 1/4 cup fresh orange juice
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (softened)
  • 1 1/2 teaspoons grated orange zest
  • 2/3 cup sugar
  • 2 large eggs
  • 1/2 cup milk
  • sifted confectioners' sugar
  • orange juice

Instructions:

  1. Preheat oven to 350.

  2. Sift flour, baking powder and salt into a medium bowl and set aside.

  3. In the bowl of a standing mixer cream the butter, orange zest and juice as well as 2/3 cup of sugar. Cream until light and fluffy.

  4. Scrape down the sides of the bowl and add eggs one at a time.

  5. Add the flour alternately with the milk and then fold in the strawberries.
    Combine.

  6. (We make this the night before and refrigerate. We fill the muffin cups in the morning and bake allowing a bit of extra time since the batter is cold)
    Bake 17 minutes.

  7. For a glaze combine sifted confectioners' sugar and orange juice until the consistency you enjoy. Spoon glaze over muffins.
