Two Melon Soup!

We were in for a surprise spring storm and had a houseful of guests who were tired of winter. So what was the solution? Pretend it was summer. Melons were the answer and this Two Melon Soup could not have been easier or prettier. Tasty too!

Ingredients:

  • 1 honeydew or Gallia Melon
  • 1 cantaloupe (It is best if they are comparable in size and nicely ripe.)
  • Sugar to taste
  • 1 teaspoon lemon juice

Instructions:

  1. Peel and cut each melon into chunks.

  2. Put honeydew melon chunks into blender with sugar to taste and about one teaspoon lemon juice. Pulse until smooth. Put honeydew pulverized melon into one bowl and chill.

  3. Put cantaloupe chunks into blender with sugar to taste and about one teaspoon lemon juice. Pulse until smooth. Put cantaloupe pulverized melon into another bowl to chill.

  4. When ready to serve, pour each melon liquid into its own measuring cup (needs to have a spout) and pour simultaneously into serving dish to show two colors.

  5. Dot with yogurt and use toothpick to drag through the yogurt.
