4th of July Brunch Worthy of Fireworks

By Ellen Gutman Chenaux

Don’t know what to serve for your 4th of July brunch? The 8 Broads in the Kitchen’s latest cookbook, Breakfast & Brunch Recipes, has many incredible recipe ideas that will knock your socks off!

Tis the season for watermelon, berries, tomatoes, cherries, corn and so much more. Dig in!

Appetizer

Grilled Watermelon Topped with Mango Salsa and Crème Fraiche (page 26): Nothing says “summer” like watermelon. Add blueberries to the garnish and voila! a red, white, and blue to begin your holiday morning.

Juice

Berry Smoothie (page 232): Healthy and gorgeous!

Muffin

Blueberry Buttermilk Muffins with Streusel Topping (page 46): Who doesn’t love a blueberry muffin? As American as apple pie!

Upside-down Cherry Muffins (page 48): Think of one of our founding fathers  – George Washington!

Cinnamon Buns (page 76): Decadent, delicious, and festive!

Main Course

There are lots of festive choices!

Blueberry Pecan Waffles (page 110):

Blueberry Cornmeal Pancakes (page 87):

Tomato Basil Pie (page 136): And tomatoes and basil are in season!

Tomato Benedict (page 160): Another great tomato recipe!

Kiss My Grits (page 180): For a taste of the South.

Sides

Glazed Bacon (page 186): Who can resist bacon?

Potato Galette: ( page 194): Combines two favorites – potatoes and tomatoes!

Corn, Tomato, Beet, and Basil Salsa (page 207): Colorful, seasonal, and delicious!

Parmesan, Heirloom Cherry Tomatoes (page 198): An 8 Broad favorite!

Drink

Cold-Brewed Iced Coffee (page 232): A popular summer alternative to hot coffee.

And most of these breakfast/brunch recipes can be made a day ahead! The smoothie, for instance, can be made ahead, chilled, and remixed in the morning. You can prep the muffins, refrigerate overnight, and bake them an hour and a half before serving. The cinnamon buns can be refrigerated overnight after the first rise. With the Tomato Basil Pie, you can certainly make and refrigerate the pie crust and the filling mixture. Ditto for the sliced tomatoes, draining them on paper towels on a cookie sheet overnight.  The Kiss My Grits can be made a couple of days ahead! What could be easier?
