Don’t you just love a simple explanation? Or a simple recipe for that matter. These super moist and flavorful brownie are perfect for just about anything.. a treat in a lunch box, on the side board for afternoon tea or on a Christmas cookie tray. They freeze beautifully, just cut them into inch squares before freezing.
Not every brownie needs to include chocolate! Here is proof.
INGREDIENTS
¾ C. pecans, chopped
1 C. flour
¾ C. packed brown sugar
½ C. shredded coconut
4 tbsp. butter
1 tsp. baking powder
1 tsp. vanilla
1 egg
¼ tsp. salt
Beat until well blended. Measure into large bowl
Pat into 8×8 greased baking pan. Decorate with pecan halves.
Bake 25 minutes at 350* or until toothpick inserted comes out clean. Enjoy!

I see coconut but no butterscotch. Am I missing something?
Not missing anything! The butterscotch flavor comes from the brown sugar and butter, which is technically what butterscotch is. The flavor is outstanding. They freeze beautifully as well.
