Calling on Dads! Are you looking for something to whip up with the kids and impress mom?? Look no further. This strawberry dish is very easy to make with little ones and mom will be impressed.
Serves one.
INGREDIENTS:
- 7-8 small ripe strawberries
- 1 – 2 tablespoons of organic sugar
- 1 – 2 tablespoons of a fancy Balsamic Vinegar, I used a blackberry – ginger Balsamic vinegar from Fiore that is really wonderful but you can use whatever you like, but don’t skimp on the quality.
- a plain small scone, or a slice of pound cake or a thin slice of freshly baked French bread.
- a mint leaf for garnish
DIRECTIONS:
Here it gets really easy. Dad, you cut the strawberries into quarters into a small bowl. Kids you get to add 1 tablespoon of sugar and one tablespoon of balsamic vinegar. Let sit for 15 – 20 minutes and taste. Add a little more sugar or vinegar if needed. Let sit a bit longer. You want the strawberries to get really juicy.
Spoon the strawberries including the juice over the nicely arranged scone, pound cake or slice of baguette. Garnish with a mint leaf and let the kids deliver it to mom. If you would prefer you could spoon the strawberries over a scoop of vanilla ice cream. Whatever you decide she will be delighted!
Happy Mother’s Day!
